The Roots of Lavender by the Bay
The history of this heavenly farm began in the late 80s, when a man named Serge found inspiration in his childhood summers amongst the sunflowers and lavender fields of the South of France. His passion for the land followed him to Israel, where he met his wife Susan. The couple eventually settled in NYC in 1979.
In search of a weekend retreat that mirrored the beauty of the South of France, Serge planted a lavender garden in their Southold, NY property. Susan began selling handcrafted lavender sachets, wands, and bouquets at the end of their driveway every summer, fueling the demand for their extraordinary lavender.
Over time, the demand for their products outgrew their modest setup. On a mission to expand, Serge and Susan eventually found the perfect location in East Marion and set up Lavender by the Bay as we know it today!
The Charm of Lavender by the Bay Today
Today, Lavender by the Bay boasts two exquisite locations—one in East Marion and another in Calverton—where both English and French lavender varieties gently sway in the breeze.
Their Calverton farm spans 17 acres and is home to over 80,000 lavender plants that typically reach peak bloom from mid-June through July and later for a smaller bloom in late summer or early fall1. But the farm's allure goes beyond just the ephemeral visual spectacle of the blossoms; visitors can purchase fresh cut lavender bundles, candles, teas, plants, body products, and honey from their on-site beehives to prolong the lavender magic.

As of June 7th, 2025, the lavender fields in Calverton have begun their enchanting transformation! Though still in their early stages, the fields are already filling with that soft purple glow and heavenly scent we all adore. The East Marion fields are currently awaiting a bit more sunlight before they join the celebration2.
